Cauliflower crust pizza

Hello dear!!

I have a super delicious and healthy recipe to share with you! It’s a cauliflower dough pizza!! There is many vegan recipes out there for this pizza, but I am not vegan even tough I eat mostly plant based.. And well, cheese is in my heart forever. This pizza is what I eat when I want something that tastes naughty but it’s totally guilt-free 🙂 It is cheesy, crunchy, healthy, light and super easy to make!

So the base of the pizza is mostly cauliflower and chia seeds, and toppings are all up to you!

Here is the ingredient list for a batch that makes 5 mini pizzas:

1 cauliflower

1 cup of chia seeds

80 grams of parmesan cheese

2 tablespoons of flax seed flour

2 eggs

1 tablespoon of olive oil

pinch of salt

Start by boiling the cauliflower until tender. Rinse really well and let it rest on kitchen towel. It should be very dry as you do not want any excess water in here. Then simply throw cauliflower,olive oil and eggs to food processor or blender (even hand mixer will work well). Transfer to a bowl and start adding all the dry ingredients until you get sticky mixture. The dough will not resemble a classic pizza dough, don’t stress out 🙂

Preheat the oven to 200 degrees, spread the baking paper on the tray and grease with coconut or olive oil.

In the meantime continue to mix the dough, and you will notice in few minutes that it became more solid thanks to chia seeds. You should be able to have a mixture which is sticky enough to spread on the baking paper with a spoon. Shape mini pizzas no bigger than palm size, because the smaller they are the easier it will be for you to take them out later on.

Then add some toppings! In the pictures above I used tomato, asparagus and prosciutto for half, and pesto with rucola and tomato for other half.

Throw it in the oven and let it stay for about 25 minutes. When you see that the crust is getting brown place a fork in the middle of the dough to make sure its well done on the inside. Serve with a nice salad and enjoy 🙂

Btw the amount of protein in this pizza is pretty high thanks to chia seeds, eggs and cheese, and on the other hand pretty low on carbs! So you can consider this as a decent post workout meal 🙂
