Vegan pancakes with cranberry sauce / Veganske palačinke sa umakom od brusnice

Hello lovely people!!

Hope you all doing good!! I have a new delicious recipe to share with you today. Pancakes are always my favourite breakfast, but I haven’t been eating them that much recently because they were not as healthy as I wanted no matter how many different variations I tried, including sugar and gluten free. This weekend I decided to give it a try and make them vegan using just a few simple ingredients, and they turned out amazing! I also find them much easier to make then classic egg&banana pancake as these don’t fall apart during the process 🙂 I served them with easy homemade cranberry sauce, and I will write the recipe for that one too.

These are fluffy, sweet, nutritious, light and versatile, full of fiber, protein and good carbs. I don’t think you need more reasons to try them 🙂

So, for the easy vegan pancakes you need:

2 bananas

1/2 cups flax flour (or just grind flax seeds in your coffee grinder)

1/2 cup of cooked quinoa

1/2 cup of chia seeds

1 and 1/2 cups of water

1 table spoon of rum

1 tea spoon of cinnamon

*if you dont have chia you can substitute with flax and vice versa

Method:

Simply blend all ingredients together in a blender until the batter is smooth. It should be thicker than classic pancake batter, but if you find it too hard to spread you can always add more water. Fry them on coconut oil. From the amount of ingredients above you will have approximately 8 pancakes.

Tips for making vegan pancakes:

  • always fry with lid on
  • make them smaller so you can flip them easily
  • fry on medium heat

For the cranberry sauce:

1 handfull of dried cranberries (chop in tiny pieces)

2 tablespoons of chia seeds

2 cups of water

Method:

Place all ingredients in sauce pan prior to making pancakes and boil for 45 mins until the sauce is thick.

Serve the pancakes stacked with sauce on top, then grate some lemon zest and add more cinnamon to make it even prettier!

Lijepi pozdrav svima! Nadam se da ste dobro 🙂 Odlučila sam si dati malo više truda i pisati recepte i na hrvatskom, kako bi vam život bio lakši! Nadam se da ću vas na taj način i više motivirati na pripremanje zdrave hrane. Ako vam je san jesti sve što želite bez da se udebljate, na pravom ste mjestu! Veliki sam ljubitelj palačinki, odrasla sam na palačinkama sa Nutellom ali iz već jaaako dugo ne jedem. U međuvremenu sam probala puno različitih bezglutenskih varijanti ali ni jedne mi nisu bile dovoljno ukusne ili su se pak raspadale pri pečenju. Ove palačinke su odlična zamjena za tradicionalne, slađeg su okusa i lako probavljive. Sve sastojke možete pronaći u bilo kojoj Bio&bio trgovini, a vjerujem i u svim većim super marketima. Toliko su slatke da vam Nutella neće trebati 🙂 Umak od brusnica sam također napravila sama i to u 2 minute pripreme.

Slijedi recept za tijesto za palačinke (8 palačinki)

2 banane

1/2 šalice brašna od lana (ako nemate brašno sameljite lanene sjemenke u mlincu za kavu)

1/2 šalice kuhane quinoe

1/2 šalice chia sjemenki

1 i 1/2 šalice vode

1 žlica ruma

1 čajna žličica cimeta

*ako nemate chia sjemenke možete koristiti lanene i obrnuto

Metoda:

Izmiksajte sve sastojke u blenderu dok smjesa ne postane glatka i gusta (toliko gusta da je treba razmazati žlicom po tavi, ne smije se previše razlijevati). Pecite palačinke na kokosovom ulju.

Savjeti za pečenje veganskih palačinki:

  • Pecite sa poklopljenom tavom
  • Palačinke neka budu manje
  • Pecite na srednjoj vatri

Za umak od brusnice:

1 šaka sušenih brusnica (sitno nasjeckanih)

2 žlice chia sjemenki

1 šalice vode

Stavite sve sastojke u manju posudu i kuhajte 45 min dok se umak ne zgusne.

 

Palačinke servirajte složene jedna na drugu, prelijte umakom te naribajte koricu limuna i pospite cimetom.

Nadam se da će vam se palačinke svidjeti i zadovoljiti vaše potrebe za slatkim 🙂
