Creamy zucchini pasta

Hey there! Here I am with a new delicious recipe for you, that is healthy, fast and easy to make and vegan!

Before writing the recipe- I just want to share a bit about all the ‘vegan things’ on my blog.. I am not vegan at all but I have a few food intolerances which make it impossible for me to eat a lot of dairy, so I stick with veggies a lot and I really enjoy creating new exciting dishes with vegetables 🙂

Now about the dish again! The ‘pasta’ is actually spiralized zucchini, and it’s raw. You can also boil it a bit if you prefer. I love zucchini pasta because it so much lighter and actually good for you, compared to traditional pasta that makes you feel like you wanna sleep for a week after eating a plate. Possibilities with this type of dish are endless, but I love this one that reminds me of pasta with cheese, thanks to nutritional yeast which has amazing cheesy flavour.

Here is the recipe: (for two)

2 big zucchinis- about 500 grams

150 grams of tofu

1 cup soy or almond milk

4 tbsp nutritional yeast

3 tbsp flax seeds

salt

cayenne pepper

rosemary

Start by making the zucchini pasta with veggie spiralizer or juliene cutter. I used juliene cutter and it works perfectly fine 🙂 In the meantime, cut tofu in cubes and fry it on coconut oil for 15 mins or until crispy, with closed lid. Then in a sauce pan heat some soy milk and add nutritional yeast, flax seeds, a bit of salt and pepper and some rosemary. Mix it well and keep on low heat. Sauce should thicken in 3,4 mins. If it doesn’t, just add some more yeast and flax seeds. And that’s pretty much all! Now serve pasta in two plates, pour some sauce over and fried tofu cubes. Enjoy 🙂

Pozdrav! Danas imam za vas super jednostavan i ukusan recept, a koji je između ostalog i veganski.

Prije pisanja recepta- samo želim reći da ja nisam vegan, ali se većina moje prehrane temelji na povrću jer imam nekoliko različitih intolerancija na hranu zbog kojih ne mogu jesti mliječne proizvode i još nekoliko druih namirnica. Ali ja svakako uživam u svemu što jedem a pripremanje različitih jela koja su ujedno i zdrava su mi pravi užitak 🙂

A sada natrag na recept! ‘Tjestenina’ u ovom receptu su zapravo tikvice, i to sirove. Možete ih skuhati malo ako želite, ali ne više od 1-2 minute da se ne raspadnu. Volim “tjesteninu” od tikvica jer je naravno puno zdravija od tradicionalne, i nakon što pojedem ovakvo jelo ne osjećam se kao da bi tjedan dana mogla spavati 🙂

Ovdje je recept: (za dvije osobe)

2 velike tikvice- cca 500 grama

150 grama tofu

1 šalica sojinog ili bademovog mlijeka

4 žlice prehrambenog kvasca

3 žlice sjemenki lana

sol

crvena paprika

ružmarin

Počnite tako da tikvice izrežete sa juliene rezačem ili spiralizatorom. Ja sam koristila juliene rezač i mogu reći da super funkcionira. U međuvremenu, izrežite tofu u kockice i popržite ga na kokosovom ulju oko 15 minuta ili dok ne postane hrskav, sa zatvorenim poklopcem. Zatim u malom loncu zagrijati mlijeko i dodati prehrambeni kvasac, lanene sjemenke, malo soli i papra i malo ružmarina. Izmiješati dobro i držati na laganoj vatri. Umak treba zgusniti u 3,4 min. Ako se to ne dogodi, samo dodajte još malo kvasca i lanene sjemenke. I to je sve! Sada poslužite tjesteninu na dva tanjura, prelijte sa umakom i na vrh dodajte poprženi tofu. Dobar tek 🙂
